Crabs dry fry ...yesterday


Ingredients
2 kg of soft shelled crab (which gave me 9 medium sized crabs)
2-3" piece of ginger
one whole pod of peeled garlic
one onion
two handfulls of curry leaves(good for your tresses and soothes an upset stomach too)
2 teaspoons of cayenne pepper (i like my food hot..one can take less too ..just remember to keep the proportion right)
1 teaspoon of turmeric powder
1 teaspoon of pepper powder
coconut oil 3 tablespoons
1 teaspoon mustard seeds .. 
Salt to taste

Method..

i clean the crab and keep the claws and legs of the crab for a different curry or turn it into a soup ...for this dish i only take the body of the crab... i grind the ginger, garlic,onion and curry leaves to a fine paste and keep it aside ....then in a hard bottomed pan (important ..or else this dish will burn) take the oil and drop the mustard seeds ...when it starts to splutter ..i switch off the stove...when the oil cools a little i add the ground paste and the dry spices ..along with the salt too...once the paste is well browned i add two cups of water ....bring it to a boil ...drop the cleaned crab body sans the claws and legs into the pan and let it cook for 15-20 minutes .... once an aroma starts emanating ....you will find the water has reduced and can stir the crabs till there is a film of oil on the sides of the pan....and the dish is ready
Serve it hot with steamed rice and wait ....for the silence ...of people eating a meal they appreciate ...
one can also add all the claws and legs too ...in this dish ...however ...the last bit of dry frying the crab becomes a tad cumbersome ...
